Here is one super tasty, fresh and morish Low G-L Cheesecake
The recipe is taken from Patrick Holford’s The Low G-L Diet Bible
The base of uses chopped fruit and nuts for a much lower G-L score. It’s an easy to prepare pudding that can be made in advance.
20g Chopped walnuts and pecan nuts (or other nuts)
4 ready to eat dried apricots
1/2 tsp walnut oil
2 tbpsp Lemon Juice
3 tsp Xylitol
grated rind of 1/2 a lemon
200g very low-fat plain cream cheese
4 tbsp berries, such as raspberries, blueberries or blackberries
1 tbsp apple juice or water
1 Place teh nuts and apricots with the oil in small blender and process until broken into very small pieces and sticking together. Press into the base of two ramekins and chill.
2 In a bowl add the lemon juice to the xylitol and stir to allow the granules to dissolve
3 Mix the Xylitol mixture and lemon rind into the cream cheese until smooth and thoroughly combined, then spoon into the prepared ramekins, level off the top and return to the fridge.
4 Put the berries in a small pan and gently stew them in apple juice or water until they soften and begin to burst. Remove from the heat and cool before pouring onto the cheesecakes.
5 Chill the cheesecakes until ready to serve.
